GAM King 6G Traditional Stone Deck Oven KING is the only deck oven in the world baking with the innovative IWOS? System (Italian Wood Oven Substitute) which mechanically replicates the air circulation found within a wood-burning pizza oven.
How does it work? The air below the refractory stone is heated by the heating elements and flows upwards through a cavity and channeled inside the baking chamber directly on pizzas through perforations in the bottom of the baking chamber. Pizzas are baked through a combination of heat from top and bottom heating elements as well as the flow of heated air coming in from both sides of the baking chamber.
